How to make Lauki Raita
Ingredients:
- Bottle gourd/ Lauki grated -1 cup
- Curd/ plain yogurt - 1 cup
- Roasted jeera/cumin powder - 1 tsp
- Green chillies - 2
- Garlic cloves - 7-8
- salt - to taste
- Red chili powder - to taste
- Coriander leaves - 1 tbsp finely chopped
Method:
- Peel the lauki, wash it and grate or cut into small pieces.
- Cook the grated lauki with 1 cup water in pressure cooker.
- Turn off the flame after 2-3 whistle.Allow it to cool.
- Whenever make the paste of garlic and green chillies.
- Take curd into a bowl and add roasted cumin seed powder, garlic and green chillies paste, salt,red chili powder.
- Whisk them until curd turns smooth.You can add some water as required.
- And now squeeze lauki to extract liquid.
- Add the lauki and coriander leaves and mix well.
- Keep in refrigerator and serve chilled along with parathas.
