Lauki Raita

                                                         Lauki Raita 

 Lauki raita is healthy, tastes delicious and equally nutritious. Serve this as a side dish with biryani,  rice, chapati, parathas and rotis.


                                                               How to make Lauki Raita

Ingredients:

  • Bottle gourd/ Lauki grated -1 cup
  • Curd/ plain yogurt - 1 cup
  • Roasted jeera/cumin powder - 1 tsp 
  • Green chillies - 2
  • Garlic cloves -  7-8
  • salt - to taste
  • Red chili powder - to taste
  • Coriander leaves - 1 tbsp finely chopped


Method:

  1. Peel the lauki, wash  it and grate or cut into small pieces.
  2. Cook the grated lauki with 1 cup water in pressure cooker.
  3. Turn off the flame after 2-3 whistle.Allow it to cool.
  4. Whenever make the paste of garlic and green chillies.
  5. Take curd into a bowl and add roasted cumin seed powder, garlic and green chillies paste, salt,red chili powder.
  6. Whisk them until curd turns smooth.You can add some water as required.
  7. And now squeeze lauki to extract liquid.
  8. Add the lauki and coriander leaves and mix well. 
  9. Keep in refrigerator and serve chilled along with parathas.
