                                             Tamarind Chutney Recipe/ Sweet Chutney

Sweet Chutney is a must have dip for pakora, bhajiya, Samosas, Kachoris, pani puri, bhel puri, sev puri, dahi Vada,ragda puri and all types Indian snacks.It is a very simple recipe.It has delicious flavours of sour and sweet as making tamarind, jaggery, black salt, cardamom powder,and other spices.

                                                  How to make Sweet Chutney

Ingredients:


  • Tamarind - 1 cup
  • Sugar/ Jaggery – 1 cup
  • Black salt — 1 tsp
  • Raisins - 40 to 50
  • Gram masala — 1 tsp
  • Cardamom powder - 1 tsp
  • Red Chili Powder - 1/2 tsp
  • Roasted cumin powder - 1 tsp
  • Water - 3 cup


Instructions:

  1. Soak tamarind with 2 cup water in a utensil .Leave for 7-8 hours.
  2. After 8 hours put the tamarind on the gas to boil.
  3. When it becomes soft then mashed tamarind and strain it and keep the pulp (Extract juice).
  4. Cook pulp (Extract juice) with 1 cup water in a pan.When it starts to boil.
  5. Add the raisins and boil till it becomes thick.
  6. Now add jaggery, red chili powder, cumin powder, rock salt, garam masala and mix well.
  7. Jaggery dissolves completely till cook on medium flame.
  8. Chutney becomes thick keep stirring occasionally. . Add cardamom powder, mix well and off flame.
  9. Allow it to cool at room temperature and store in a clean dry container.
